Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 2 bunches asparagus, trimmed and cut
  • 4 tablespoons crème fraîche
  • 3 tablespoons vegetable broth
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons Dijon mustard
  • 2 tablespoons whole grain mustard
  • 1 teaspoon lemon zest
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 sheets aluminum foil
  • 4 sheets parchment paper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Whisk crème fraîche, broth, lemon juice, Dijon mustard, whole grain mustard, lemon zest, salt, and pepper until smooth.
  3. Layer parchment over foil for each packet.
  4. Divide asparagus evenly between packets and drizzle with olive oil.
  5. Place salmon fillets on top of asparagus.
  6. Spoon mustard sauce over each fillet.
  7. Seal packets tightly with foil and parchment.
  8. Bake for 12–17 minutes until salmon is opaque and flakes easily.
  9. Carefully open packets and serve warm.
