Description

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 tablespoon fresh lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 3/4 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 cup powdered sugar (for coating)
  • 1 teaspoon lemon zest (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream softened butter and powdered sugar until smooth and fluffy.
  3. Mix in lemon zest and lemon juice until fully incorporated.
  4. In a separate bowl, whisk together flour, cornstarch, and salt.
  5. Gradually add dry ingredients to the butter mixture and mix until a soft dough forms.
  6. Roll dough into 1-inch balls and place 2 inches apart on the baking sheets.
  7. Bake for 12–14 minutes, until bottoms are set but tops remain pale.
  8. Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. Mix powdered sugar and lemon zest for the coating. Roll cooled cookies in the mixture until evenly coated.
