Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 tablespoon fresh lemon zest

- 1 3/4 cups all-purpose flour
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 cup powdered sugar (for coating)
- 1 teaspoon lemon zest (for coating)
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream softened butter and powdered sugar until smooth and fluffy.
- Mix in lemon zest and lemon juice until fully incorporated.
- In a separate bowl, whisk together flour, cornstarch, and salt.
- Gradually add dry ingredients to the butter mixture and mix until a soft dough forms.
- Roll dough into 1-inch balls and place 2 inches apart on the baking sheets.
- Bake for 12–14 minutes, until bottoms are set but tops remain pale.
- Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Mix powdered sugar and lemon zest for the coating. Roll cooled cookies in the mixture until evenly coated.
Notes
- Use fresh lemon juice and zest for the best flavor.
- If dough feels too soft, chill it for 15 minutes before baking to prevent spreading.
- Cookies should not brown on top—remove when bottoms are just lightly golden.
