Description
A soft and aromatic bread with a savory zaatar filling swirled throughout, creating a flavorful and visually appealing loaf.
Ingredients
- 3 1/2 cups all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 2 1/4 teaspoons active dry yeast
- 1 cup warm water
- 1/4 cup olive oil
- 1/3 cup zaatar spice blend
- 1/3 cup olive oil
- 1 tablespoon sesame seeds (optional)
Instructions
- In a bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.
- Add olive oil, flour, and salt, then mix into a dough and knead for 8–10 minutes until smooth.
- Place in an oiled bowl, cover, and let rise for 1–1.5 hours until doubled.
- Roll dough into a rectangle about 1/4 inch thick.
- Mix zaatar with olive oil and spread evenly over the dough.
- Roll tightly into a log, slice lengthwise, and twist the halves together with cut sides facing up.
- Place in a greased loaf pan, cover, and let rise for 30–40 minutes.
- Preheat oven to 180°C (350°F), sprinkle sesame seeds if desired, and bake for 30–35 minutes until golden.
- Cool slightly before slicing and serving.
Notes
- Use fresh yeast for best rising results.
- Add cheese or honey for variation.
- Do not overfill to keep layers intact.
- Can be shaped into rolls instead of a loaf.
- Freezes well for up to 2 months.
