Description

A soft and aromatic bread with a savory zaatar filling swirled throughout, creating a flavorful and visually appealing loaf.


Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm water
  • 1/4 cup olive oil
  • 1/3 cup zaatar spice blend
  • 1/3 cup olive oil
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. In a bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.
  2. Add olive oil, flour, and salt, then mix into a dough and knead for 8–10 minutes until smooth.
  3. Place in an oiled bowl, cover, and let rise for 1–1.5 hours until doubled.
  4. Roll dough into a rectangle about 1/4 inch thick.
  5. Mix zaatar with olive oil and spread evenly over the dough.
  6. Roll tightly into a log, slice lengthwise, and twist the halves together with cut sides facing up.
  7. Place in a greased loaf pan, cover, and let rise for 30–40 minutes.
  8. Preheat oven to 180°C (350°F), sprinkle sesame seeds if desired, and bake for 30–35 minutes until golden.
  9. Cool slightly before slicing and serving.

  • Use fresh yeast for best rising results.
  • Add cheese or honey for variation.
  • Do not overfill to keep layers intact.
  • Can be shaped into rolls instead of a loaf.
