Description

Za’atar Flatbread is a Middle Eastern bread topped with a fragrant mix of za’atar and olive oil. Soft, chewy, and bursting with earthy, tangy, and nutty flavors, it’s perfect on its own or paired with cheese, fresh vegetables, or dips like hummus.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 3/4 cup warm water (as needed for dough)
  • 3 tablespoons olive oil, divided
  • 2 tablespoons za’atar spice blend

Instructions

  1. In a bowl, mix warm water, sugar, and yeast. Let sit 10 minutes until frothy.
  2. Combine flour and salt in a large bowl. Add yeast mixture and knead into a soft dough.
  3. Add 1 tablespoon olive oil, knead until smooth, then cover and rest 1 hour until doubled in size.
  4. Punch down dough, divide into 4 equal balls, and rest covered for 15 minutes.
  5. Mix za’atar with 2 tablespoons olive oil to form a paste.
  6. Preheat oven to 425°F (220°C) with a pizza stone or baking sheet inside.
  7. Roll each dough ball into a 6-inch circle, about 1/4 inch thick.
  8. Spread za’atar paste on top, leaving a small border, and press indentations with fingers.
  9. Transfer to parchment and bake 10–12 minutes until edges are golden.
  10. Cool slightly before serving, optionally topping with cucumbers, tomatoes, or cheese.

  • Top with feta, labneh, or fresh veggies for extra flavor.
  • Add onions or bell peppers before baking for crunch.
  • Use half whole wheat flour for a heartier texture.
  • For a quick version, substitute baking powder for yeast.
