Description
A hearty wild rice pilaf cooked with aromatic vegetables, mushrooms, and vegetable broth, then finished with fresh parsley. This wholesome dish is flavorful, satisfying, and perfect as a versatile side or light plant-based meal.
Ingredients
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 medium carrots, cut into 1/2-inch pieces
- 3 celery stalks, cut into 1/2-inch pieces
- 8 ounces mushrooms, sliced
- 2 cloves garlic, minced
- 2 cups wild rice blend, rinsed
- 3 cups vegetable stock
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 cup fresh parsley, finely chopped
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion, carrots, and celery and sauté for 4–5 minutes until the vegetables begin to soften.
- Stir in the sliced mushrooms and cook for 5–7 minutes until softened and lightly browned.
- Add the minced garlic and cook for about 30 seconds until fragrant.
- Stir in the rinsed wild rice blend, vegetable stock, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot.
- Simmer for 45–50 minutes until the rice is tender and most of the liquid has been absorbed.
- Remove the pot from the heat and allow the pilaf to rest for 5 minutes.
- Fluff the rice with a fork, stir in the chopped parsley, taste, and adjust seasoning before serving.
Notes
- Add toasted almonds, walnuts, or pecans for extra crunch.
- A squeeze of fresh lemon juice at the end brightens the flavor.
- Fresh herbs like thyme, dill, or chives can replace or complement the parsley.
- Cooked chickpeas or lentils can be stirred in to make the dish more substantial.
- Store leftovers in the refrigerator for up to 5 days or freeze for up to 3 months.
