Ingredients
- 2 large chicken breasts, sliced into cutlets
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 8 ounces mushrooms, sliced
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated parmesan cheese
- 1 teaspoon dried thyme
- 1 tablespoon fresh parsley, chopped
Instructions
- Season the chicken cutlets on both sides with salt, black pepper, and paprika.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4 to 5 minutes per side until golden brown and cooked through. Remove and set aside.
- Reduce the heat to medium and add the butter to the same skillet.
- Once melted, add the chopped onion and cook for 2 to 3 minutes until softened.
- Stir in the garlic and cook for 30 seconds until fragrant.
- Add the sliced mushrooms and cook for 5 to 7 minutes until they release their moisture and become golden brown.
- Pour in the chicken broth and simmer for 2 minutes, scraping up any browned bits from the pan.
- Reduce the heat to low and stir in the heavy cream, parmesan cheese, and dried thyme. Simmer gently for 3 to 5 minutes until the sauce thickens.
- Return the chicken to the skillet and spoon the sauce over the top.
- Let everything simmer together for 3 to 4 minutes so the flavors blend.
- Garnish with fresh parsley and serve hot.

- Use finely grated parmesan so it melts smoothly into the sauce.
