Ingredients

  • 1 pound beef or chicken sausage
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes with green chilies (10 ounces)
  • 8 ounces cream cheese, cubed
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup whole milk
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 small jalapeño, finely chopped (optional)
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat and cook sausage for 5–7 minutes until browned.
  2. Add diced onion and cook for 3 minutes until softened.
  3. Stir in garlic and jalapeño and cook for 30 seconds.
  4. Add diced tomatoes with chilies, smoked paprika, cumin, black pepper, and salt, and stir well.
  5. Add cream cheese and milk, stirring until smooth and melted.
  6. Reduce heat to low and gradually add cheddar and mozzarella, stirring until fully melted and creamy.
  7. Remove from heat and stir in cilantro if desired.
  8. Serve hot with tortilla chips or keep warm in a slow cooker.
