Ingredients
- 1 pound beef or chicken sausage
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 can diced tomatoes with green chilies (10 ounces)
- 8 ounces cream cheese, cubed
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup whole milk
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 small jalapeño, finely chopped (optional)
- 2 tablespoons chopped fresh cilantro (optional)

Instructions
- Heat olive oil in a large skillet over medium heat and cook sausage for 5–7 minutes until browned.
- Add diced onion and cook for 3 minutes until softened.
- Stir in garlic and jalapeño and cook for 30 seconds.
- Add diced tomatoes with green chilies, smoked paprika, cumin, black pepper, and salt, and stir well.
- Add cream cheese and milk, stirring until smooth and melted.
- Reduce heat to low and gradually add cheddar and mozzarella, stirring until fully melted and creamy.
- Remove from heat and stir in cilantro if desired.
- Serve hot with tortilla chips or keep warm in a slow cooker.
