Description

A vibrant, golden-hued roasted cauliflower side dish seasoned with turmeric, cumin, paprika, and garlic. Crispy on the edges, tender inside, and naturally vegan and gluten-free, it’s perfect for adding flavor and color to any meal.


Ingredients

  • 1 large head cauliflower (about 2 lb)
  • 4 medium garlic cloves, minced
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon turmeric
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions

  1. Preheat oven to 450°F (230°C).
  2. Chop cauliflower into evenly sized florets and mince garlic.
  3. In a large bowl, toss cauliflower with garlic, olive oil, cumin, paprika, turmeric, red pepper flakes, salt, and pepper until evenly coated.
  4. Spread florets in a single layer on a parchment-lined baking sheet.
  5. Roast for 25–35 minutes, stirring halfway through, until tender and crispy at the edges.
  6. Serve hot as a side dish or snack.

  • For smokiness, swap regular paprika with smoked paprika.
