These Tomato Basil Mozzarella Toasts are crispy, cheesy, and bursting with fresh flavor. Perfect as a quick snack, appetizer, or light meal, they combine juicy tomatoes, creamy mozzarella, and fragrant basil on toasted bread.
Ingredients
- 8 slices crusty bread (sourdough or Italian)
- 2 tablespoons olive oil
- 3 large ripe tomatoes, thinly sliced
- 8 slices fresh mozzarella cheese (about 170 g / 6 oz)
- 2 garlic cloves, finely minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon dried oregano or Italian seasoning
- 1/4 cup fresh basil leaves, finely chopped
Instructions
- Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
- Arrange bread slices on the sheet and brush both sides with olive oil.
- Toast in oven for 5–7 minutes, flipping once, until lightly golden.
- Rub or spread minced garlic onto the warm toasted bread.
- Top each toast with sliced tomato.
- Season with salt, pepper, and dried oregano or Italian seasoning.
- Add a slice of mozzarella to each toast.
- Return to oven and bake for 6–8 minutes, until cheese melts and bubbles.
- Sprinkle with fresh basil and serve warm.
Notes
- Drizzle with balsamic glaze for added depth.
- Try a layer of pesto under the tomatoes for extra richness.
- Use cherry tomatoes or add olives for variation.
