Ingredients
- 24 Oreo cookies
- 1/4 cup unsalted butter, melted
- 2 cups semi-sweet chocolate chips
- 3/4 cup heavy cream, divided
- 680 g cream cheese, softened
- 1 1/2 cups granulated sugar
- 1/4 cup unsweetened cocoa powder
- 5 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 1/2 cups semi-sweet chocolate chips (for ganache)
- 3/4 cup heavy cream (for ganache)
Instructions
- Preheat oven to 325°F (165°C) and grease a 9-inch springform pan.
- Crush Oreos into fine crumbs and mix with melted butter. Press into pan base and bake for 10 minutes. Let cool.
- Heat 1/4 cup cream and stir in 2 cups chocolate chips until smooth. Let cool slightly.
- In a large bowl, beat cream cheese until smooth. Add sugar and cocoa powder; mix until well combined.
- Beat in eggs one at a time, then add remaining 1/2 cup cream and vanilla extract.
- Fold in the melted chocolate mixture until smooth.
- Pour batter over the cooled crust and smooth the top.
- Bake for 70 minutes. Let cool in oven with door slightly open for 1 hour.
- Cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
- To make ganache, pour hot cream over chocolate chips. Let sit 2 minutes, then stir until smooth.
- Spread ganache over chilled cheesecake and let set for 15 minutes before slicing.
