Description

A playful lemon cake inspired by The Color Monster, featuring a soft plant-based lemon base and a creamy vegan frosting swirled with natural colors. Fun, vibrant, and perfect for creative baking with kids and adults alike.


Ingredients

  • Wet Ingredients: 1 cup granulated sugar
  • 2/3 cup soy milk
  • 1 cup liquid egg replacer (such as Just Egg) or silken tofu, blended smooth
  • 1/3 cup fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/2 cup avocado oil
  • Dry Ingredients: 3 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • Frosting: 4 ounces vegan cream cheese, softened
  • 1 cup powdered sugar
  • 2 tablespoons soy milk
  • Decorating: plant-based food coloring (beet powder, spirulina, turmeric, butterfly pea powder)
  • Candy eyeballs (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 9-inch square pan with parchment paper.
  2. In a large bowl, mix sugar, soy milk, egg replacer or blended tofu, lemon juice, lemon zest, vanilla, and avocado oil until smooth.
  3. In another bowl, whisk flour, salt, and baking powder.
  4. Gradually add dry ingredients to wet ingredients, mixing just until combined.
  5. Pour batter into prepared pan and smooth the top.
  6. If desired, add drops of plant-based coloring to the batter and gently swirl.
  7. Bake 25–30 minutes, until a toothpick inserted in the center comes out clean.
  8. For frosting, beat vegan cream cheese, powdered sugar, and soy milk until smooth and thick.
  9. Divide frosting into bowls and tint with different natural colors. Chill briefly.
  10. Cool cake completely, then spoon and swirl colored frostings over the top. Decorate as desired and serve.

Notes

  • Do not overmix the batter to avoid a dense cake.
  • Store frosted cake refrigerated up to 4 days.
  • Unfrosted cake can be frozen up to 2 months.
  • Works well as cupcakes; bake 18–22 minutes.
