Ingredients
- 2 tablespoons olive oil
- 3 garlic cloves, finely grated

- 1 tablespoon finely chopped parsley, plus more for serving (optional)
- 1 1/2 pounds yellow baby/new potatoes (about 24 ounces), cleaned and patted dry
- 2 ounces finely grated Parmesan cheese (about 3/4 cup)
Instructions
- Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper and position rack in the center.
- In a large bowl, mix olive oil, grated garlic, salt, pepper, cayenne (if using), and parsley.
- Slice baby potatoes in half and add them to the bowl, tossing until evenly coated.
- Add finely grated Parmesan and gently toss again to coat the potatoes without clumping.
- Arrange potatoes cut side down on the baking sheet. Scrape any remaining Parmesan mixture onto their flat surfaces.
- Roast for 25 to 35 minutes, rotating the pan halfway through, until potatoes are fork-tender and cheese is golden brown.
- Let rest for 5 minutes to allow the Parmesan to crisp up.
- Flip potatoes to reveal crispy cheese crust and transfer to a serving platter.
- Garnish with additional parsley if desired and serve immediately.
