Description

These crispy Parmesan potatoes feature a golden, cheesy crust with a tender interior. Coated in garlic-infused olive oil and finely grated Parmesan, they roast to perfection in just over 30 minutes, making them a quick and irresistible side dish for any meal.


Ingredients

  • 2 tablespoons olive oil
  • 3 garlic cloves, finely grated
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon cayenne pepper (optional)
  • 1 tablespoon finely chopped parsley, plus more for serving (optional)
  • 1 1/2 pounds yellow baby/new potatoes (about 24 ounces), cleaned and patted dry
  • 2 ounces finely grated Parmesan cheese (about 3/4 cup)

Instructions

  1. Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper and position rack in the center.
  2. In a large bowl, mix olive oil, grated garlic, salt, pepper, cayenne (if using), and parsley.
  3. Slice baby potatoes in half and add them to the bowl, tossing until evenly coated.
  4. Add finely grated Parmesan and gently toss again to coat the potatoes without clumping.
  5. Arrange potatoes cut side down on the baking sheet. Scrape any remaining Parmesan mixture onto their flat surfaces.
  6. Roast for 25 to 35 minutes, rotating the pan halfway through, until potatoes are fork-tender and cheese is golden brown.
  7. Let rest for 5 minutes to allow the Parmesan to crisp up.
  8. Flip potatoes to reveal crispy cheese crust and transfer to a serving platter.
  9. Garnish with additional parsley if desired and serve immediately.
