A creamy, flavorful Thai peanut dressing made with peanut butter, lime, soy sauce, and ginger, perfect for salads, dipping, or marinades.

Ingredients

  • 1/2 cup peanut butter
  • 1/3 cup rice vinegar
  • Juice of 1 lime
  • 1/4 cup vegetable oil
  • 1 tablespoon sesame oil
  • 3 tablespoons soy sauce
  • 3 tablespoons honey
  • 2 cloves garlic, finely chopped
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon salt
  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. Add peanut butter, rice vinegar, lime juice, vegetable oil, sesame oil, soy sauce, and honey to a blender.
  2. Add garlic, ginger, salt, and red pepper flakes if using.
  3. Blend until smooth and creamy.
  4. If too thick, add water one tablespoon at a time until desired consistency is reached.
  5. Taste and adjust seasoning as needed.
  6. Transfer to a jar and use immediately or store.

Notes

  • Add water gradually to control thickness.
  • Use fresh lime juice for best flavor.
  • Substitute honey with agave for a vegan version.
  • Store in the refrigerator for up to 4 days.
  • Let sit at room temperature and stir before using if thickened.
  • Works well as dressing, dip, or marinade.
