Description

Juicy baked beef meatballs glazed in a homemade teriyaki sauce. These Teriyaki Beef Meatballs are fast, flavorful, and perfect for serving over rice or as a bite-sized appetizer. Ready in under 30 minutes!


Ingredients

2 lb ground beef

1/2 cup panko breadcrumbs

2 large eggs

1 tsp black pepper

1 tsp salt

1/4 cup diced green onion

2 tsp minced ginger

2 tsp minced garlic

1/2 cup soy sauce

1/2 cup water

1/4 cup brown sugar

1 tbsp sesame oil

1 tbsp rice wine vinegar

2 tsp cornstarch + 2 tsp water (slurry)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix ground beef, panko breadcrumbs, eggs, pepper, salt, green onion, ginger, and garlic until just combined.
  3. Form into 12 equal-sized meatballs and place on the prepared baking sheet.
  4. Bake for 18–20 minutes or until golden and cooked through.
  5. Meanwhile, in a saucepan over medium heat, combine soy sauce, water, brown sugar, sesame oil, and rice wine vinegar. Bring to a simmer.
  6. Stir in cornstarch slurry and cook until the sauce thickens, about 1–2 minutes.
  7. Add baked meatballs to the sauce and toss until evenly coated.
  8. Serve hot over rice, noodles, or as an appetizer.

Notes

  • Swap half the beef with ground pork or turkey for variation.
  • Add pineapple chunks or bell peppers for a fruity or veggie boost.
  • Use gluten-free panko and tamari for a gluten-free version.
  • Make meatballs and sauce ahead; reheat gently before serving.
