Ingredients
4 tablespoons butter
3 tablespoons honey
2 tablespoons light brown sugar
1 teaspoon tomato paste
1½ teaspoons tamarind juice
1 pound roasted nuts (e.g., cashews, almonds, walnuts)
Optional: cayenne pepper or garam masala, to taste
Fresh mint, finely chopped (for garnish)
Instructions
- Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a saucepan over medium heat, melt butter, honey, brown sugar, tomato paste, and tamarind juice. Stir until smooth and simmering.
- Add roasted nuts and stir to evenly coat them in the glaze.
- Spread coated nuts in an even layer on the prepared baking sheet.
- Bake for 20–25 minutes, stirring once halfway through, until coating is set and nuts are fragrant.
- Remove from oven and immediately sprinkle with fresh chopped mint.
- Allow to cool before serving or storing.
Notes
- For a vegan version, use coconut oil instead of butter and maple syrup instead of honey.
- Substitute coconut sugar or date syrup for brown sugar if preferred.
- Add cayenne or garam masala for extra spice and warmth.
- A sprinkle of citrus zest (lime or lemon) adds brightness.
