Description

Ingredients

4 tablespoons butter

3 tablespoons honey

2 tablespoons light brown sugar

1 teaspoon tomato paste

1½ teaspoons tamarind juice

1 pound roasted nuts (e.g., cashews, almonds, walnuts)

Optional: cayenne pepper or garam masala, to taste

Fresh mint, finely chopped (for garnish)


Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a saucepan over medium heat, melt butter, honey, brown sugar, tomato paste, and tamarind juice. Stir until smooth and simmering.
  3. Add roasted nuts and stir to evenly coat them in the glaze.
  4. Spread coated nuts in an even layer on the prepared baking sheet.
  5. Bake for 20–25 minutes, stirring once halfway through, until coating is set and nuts are fragrant.
  6. Remove from oven and immediately sprinkle with fresh chopped mint.
  7. Allow to cool before serving or storing.

Notes

  • For a vegan version, use coconut oil instead of butter and maple syrup instead of honey.
  • Substitute coconut sugar or date syrup for brown sugar if preferred.
  • Add cayenne or garam masala for extra spice and warmth.
  • A sprinkle of citrus zest (lime or lemon) adds brightness.
