This Tamarind-Lime Cooler is a tangy, sweet, and refreshing drink perfect for hot summer days. With tart tamarind concentrate, fresh lime juice, agave nectar, and a spicy chile-salt rim, it’s a unique cooler that balances sweet, sour, and heat beautifully.
Ingredients
- 3/4 cup fresh lime juice
- 3/4 cup agave nectar
- 1 tablespoon tamarind concentrate
- Seltzer, to top
- 1 tablespoon kosher salt
- 1 tablespoon sugar
- 1 tablespoon chile powder
- Ice cubes
- Lime wedges and slices, for rimming and garnish
Instructions
- In a small saucepan over low heat, whisk together lime juice, agave nectar, and tamarind concentrate for about 2 minutes until blended. Strain into a pitcher and chill.
- Mix kosher salt, sugar, and chile powder in a shallow plate.
- Rub a lime wedge around the rim of each glass and dip into the chile-salt mixture to coat.
- Fill each of the 6 glasses with ice, pour in 1/4 cup of the chilled syrup, and top with seltzer.
- Stir gently and garnish with a lime slice. Serve immediately.
Notes
- Swap agave nectar with honey or simple syrup for a different sweetness.
- Use sparkling mineral water instead of seltzer for stronger fizz.
- Add mezcal for a spiked cocktail version.
- Include muddled mint or basil for extra freshness.
