Description

Tahini & Banana Brûlée Tart is a sophisticated yet comforting dessert that pairs the nuttiness of tahini with ripe bananas in a silky custard, all nestled in a buttery tart crust and topped with a crisp caramelized sugar layer.


Ingredients

  • 1 1/4 cups all-purpose flour (150 g)
  • 1/4 cup powdered sugar (30 g)
  • 1/2 cup unsalted butter, cold and cubed (115 g)
  • 1 large egg yolk
  • 1 to 2 tablespoons cold water
  • 1/4 teaspoon salt
  • 3 ripe bananas, mashed (about 1 1/2 cups or 340 g)
  • 1/2 cup tahini (120 g)
  • 1/2 cup granulated sugar (100 g)
  • 2 large eggs
  • 1/2 cup heavy cream (120 ml)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup granulated sugar (65 g) for brûlée topping

Instructions

  1. In a bowl, combine flour, powdered sugar, and salt. Add cold butter and rub it into the flour until the mixture resembles coarse crumbs.
  2. Mix in the egg yolk and add cold water, one tablespoon at a time, until the dough comes together.
  3. Shape the dough into a disc, wrap in plastic, and refrigerate for 30 minutes.
  4. Roll out the chilled dough and press it into a 9-inch tart pan. Trim excess dough and prick the base with a fork.
  5. Bake the crust at 180°C (350°F) for 15 minutes, then let it cool slightly.
  6. In a bowl, whisk together mashed bananas, tahini, sugar, eggs, cream, vanilla, salt, and cinnamon until smooth.
  7. Pour the filling into the pre-baked crust and smooth the top.
  8. Bake for 30–35 minutes, or until the filling is set but slightly wobbly in the center.
  9. Cool the tart completely, then refrigerate for at least 2 hours.
  10. Before serving, sprinkle sugar evenly over the top and caramelize using a kitchen torch until golden and crisp.

Notes

  • Use very ripe bananas for the best flavor and natural sweetness.
  • A kitchen torch gives the best brûlée finish; broiler can be used as an alternative.
  • You can make the tart a day in advance and brûlée just before serving.
  • Substitute cardamom for cinnamon for a different flavor profile.
  • Top with sesame seeds or banana slices for garnish.
