Description
Taco Loaded Baked Potatoes are crispy-skinned russets filled with seasoned ground beef, melted cheddar, and fresh taco toppings. A hearty, customizable Tex-Mex-inspired dinner perfect for busy nights or family meals.
Ingredients
- 4–6 medium russet potatoes
- 2 tbsp olive oil
- 1 tsp coarse salt
- 1 lb lean ground beef
- 1 packet (1 oz) taco seasoning
- ½ cup water
- 1 cup shredded sharp cheddar cheese
- ½ cup sour cream
- ¼ cup chopped green onions
- ½ cup diced fresh tomatoes
Instructions
- Preheat oven to 400°F (200°C). Scrub and dry potatoes, then prick with a fork. Rub with olive oil, sprinkle with salt, and bake directly on the oven rack for 45–50 minutes until fork-tender.
- Meanwhile, cook ground beef in a skillet over medium heat for 7–8 minutes until browned. Drain excess fat.
- Stir in taco seasoning and water. Simmer for 5 minutes until thickened. Set aside.
- Once potatoes are done, slice each down the middle and fluff the inside with a fork.
- Spoon taco meat into each potato, top with shredded cheese, sour cream, green onions, and tomatoes. Serve hot.
Notes
- Swap ground beef for turkey or plant-based meat for a lighter version.
- Use sweet potatoes for a different twist.
- Top with avocado, salsa, or jalapeños for extra flavor.
