Description

A homemade version of Taco Bell’s Mexican Pizza featuring crispy tortillas layered with seasoned beef, refried beans, enchilada sauce, melted cheese, and fresh toppings. Easy to make and packed with bold, nostalgic flavors.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning (about 1 oz)
  • 3/4 cup water
  • 1 can refried beans (16 oz)
  • 8 small flour tortillas (8-inch)
  • 1/2 cup vegetable oil, for frying
  • 1 cup enchilada sauce
  • 2 cups shredded Mexican-style cheese blend
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 2 tablespoons chopped green onions

Instructions

  1. Heat a skillet over medium heat and add the ground beef. Cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  2. Add taco seasoning and water to the beef, stir, and simmer for 5 minutes until thickened. Set aside.
  3. In a small saucepan, warm the refried beans over low heat until smooth and spreadable. Set aside.
  4. Heat vegetable oil in a wide skillet over medium heat. Fry each tortilla for about 30 seconds per side until golden and crispy. Drain on paper towels.
  5. Preheat the oven to 400°F (200°C).
  6. To assemble, place one crispy tortilla on a baking sheet. Spread a thin layer of refried beans, followed by seasoned beef.
  7. Top with a second tortilla, then spread enchilada sauce and sprinkle with shredded cheese.
  8. Repeat with remaining tortillas to make four pizzas.
  9. Bake for 8–10 minutes until the cheese is melted and bubbly.
  10. Remove from oven and top with diced tomatoes, black olives, and green onions. Let rest 2 minutes before slicing.
