Description

These Sweet & Spicy Jalapeño Pickles are quick refrigerator pickles made with fresh jalapeños and onions in a tangy, lightly sweetened brine. With bold flavor and a perfect balance of heat and sweetness, they’re ideal for topping burgers, tacos, sandwiches, and more.


Ingredients

  • 2 cups fresh jalapeños, sliced into rings
  • 1/2 cup yellow onion, sliced paper thin
  • 3/4 cup white vinegar
  • 1/4 cup apple cider vinegar
  • 1/2 cup granulated sugar
  • 1 teaspoon celery seed
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon salt

Instructions

  1. Place the sliced jalapeños and onions into a clean, heat-safe glass jar, packing them gently.
  2. In a small saucepan, combine the white vinegar, apple cider vinegar, sugar, celery seed, mustard seeds, and salt. Stir well to distribute the spices.
  3. Bring the brine to a gentle boil over medium-high heat, stirring occasionally, until the sugar and salt dissolve (about 3–4 minutes).
  4. Carefully pour the hot brine over the jalapeños and onions in the jar, ensuring all vegetables are submerged.
  5. Let the jar sit uncovered at room temperature for 1 hour to cool.
  6. Seal the jar and refrigerate for at least 4 hours before serving. For best flavor, chill overnight.

Notes

  • Remove jalapeño seeds for a milder pickle.
  • Add crushed red pepper flakes or leave seeds intact for more heat.
  • Include a garlic clove or a pinch of turmeric for deeper flavor.
