Ingredients
- 2 cups nonfat Greek yogurt
- 1 cup fresh strawberries, divided (½ cup for blending, ½ cup sliced for topping)
- ¼ cup honey
- ¾ teaspoon vanilla extract
- Pinch of salt
- ¼ cup whole raw pistachios
Instructions
- Line a 13×9-inch baking sheet with parchment paper.
- In a blender or food processor, combine Greek yogurt, honey, ½ cup strawberries, vanilla, and salt. Blend until smooth (about 10–15 seconds).
- Pour the yogurt mixture onto the prepared sheet and spread evenly with a spatula.
- Top with remaining sliced strawberries and sprinkle with pistachios.
- Freeze for about 2 hours, or until fully firm.
- Remove from freezer, cut into 12 pieces, and serve immediately.
