Description

These Strawberry Shortcake Greek Yogurt Popsicles are creamy, fruity frozen treats made with real strawberries, vanilla Greek yogurt, and soft crumbled shortcake. They’re easy to prepare, kid-friendly, and perfect for hot days.

Ingredients

  • 1 cup Chobani non-fat vanilla Greek yogurt
  • 1/2 cup milk
  • 1/2 teaspoon ground vanilla beans
  • 1/3 cup chopped strawberries
  • 1/3 cup crumbled shortcake

Instructions

  1. In a mixing bowl, whisk together the Greek yogurt, milk, and ground vanilla beans until smooth.
  2. Gently fold in chopped strawberries and crumbled shortcake.
  3. Spoon the mixture evenly into popsicle molds.
  4. Freeze for 1 hour, then insert popsicle sticks.
  5. Continue freezing for an additional 3–4 hours until fully solid.
  6. To release, run warm water over the outside of the molds and gently pull out the popsicles.

Notes

  • Use honey Greek yogurt for added sweetness.
  • Substitute shortcake with vanilla wafer cookies for a crunchier bite.
  • Add a swirl of strawberry jam for stronger berry flavor.
  • Mix in other berries like blueberries or raspberries for variety.
  • Use coconut milk for a richer, dairy-free version.
