Description

This roasted strawberry compote is infused with rose water, fresh mint, and honey for a fragrant, Mediterranean-inspired topping. Naturally sweet and slightly floral, it’s an elegant and versatile addition to breakfast or dessert.


Ingredients

  • 1 pound fresh strawberries, cleaned and dried
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon food-grade rose water
  • 2 1/2 tablespoons honey
  • 1/4 teaspoon lemon zest
  • 1/4 teaspoon finely minced fresh mint leaves
  • Fresh mint leaves and lemon zest for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Hull the strawberries and slice in half. Place in a mixing bowl.
  3. Add vanilla extract, rose water, honey, lemon zest, and minced mint. Gently toss to coat evenly.
  4. Spread strawberries in a single layer on a rimmed baking sheet.
  5. Roast for 35 minutes, stirring once halfway through.
  6. Transfer strawberries and juices to a bowl. Mash lightly with a fork for a chunky texture.
  7. Let cool 5–10 minutes before serving. Garnish with fresh mint or extra lemon zest if desired.

  • Use orange blossom water instead of rose water for a warmer floral note.
  • Swap mint for basil or add a pinch of ground cardamom for variation.
