This roasted strawberry compote is infused with rose water, fresh mint, and honey for a fragrant, Mediterranean-inspired topping. Naturally sweet and slightly floral, it’s an elegant and versatile addition to breakfast or dessert.
Ingredients
- 1 pound fresh strawberries, cleaned and dried
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon food-grade rose water
- 2 1/2 tablespoons honey
- 1/4 teaspoon lemon zest
- 1/4 teaspoon finely minced fresh mint leaves
- Fresh mint leaves and lemon zest for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Hull the strawberries and slice in half. Place in a mixing bowl.
- Add vanilla extract, rose water, honey, lemon zest, and minced mint. Gently toss to coat evenly.
- Spread strawberries in a single layer on a rimmed baking sheet.
- Roast for 35 minutes, stirring once halfway through.
- Transfer strawberries and juices to a bowl. Mash lightly with a fork for a chunky texture.
- Let cool 5–10 minutes before serving. Garnish with fresh mint or extra lemon zest if desired.
Notes
- Use orange blossom water instead of rose water for a warmer floral note.
- Swap mint for basil or add a pinch of ground cardamom for variation.
- Adjust lemon zest for a brighter citrus profile.
- Compote can be served warm, room temperature, or cold.
