Ingredients
- 6 cups whole fresh strawberries, hulled and quartered
- 1/4 cup white sugar
- 1 tablespoon cornstarch
- 1 1/4 cups all-purpose flour
- 1/3 cup white sugar
- 2 teaspoons baking powder
- 1/4 teaspoon kosher salt
- 5 tablespoons unsalted butter
- 1/2 cup cold buttermilk
- 1 teaspoon pure vanilla extract
Instructions
- Preheat oven to 375°F. Lightly grease a 9×9-inch baking dish and place on a sheet pan.
- In a large bowl, combine strawberries, sugar, and cornstarch. Spread into the baking dish and bake for 15 minutes.
- While baking, mix flour, sugar, baking powder, and salt in a bowl.
- Melt butter and stir in cold buttermilk and vanilla. It may look curdled—this is expected.
- Pour butter mixture into the dry ingredients and stir gently until just combined.
- Remove dish from oven. Drop 1/4-cup scoops of biscuit dough over hot fruit.
- Return to oven and bake 28–32 minutes until biscuits are golden and filling is bubbling.
- Let cool for 10 minutes before serving.
Notes
- Use frozen strawberries if fresh are unavailable—no need to defrost.
- For a mixed berry version, add blueberries or raspberries.
- Double the topping for a thicker biscuit layer, adding 5 minutes to baking time.
- Reheat in the oven to maintain biscuit texture.
