Description

Ingredients

  • 6 cups whole fresh strawberries, hulled and quartered
  • 1/4 cup white sugar
  • 1 tablespoon cornstarch
  • 1 1/4 cups all-purpose flour
  • 1/3 cup white sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • 5 tablespoons unsalted butter
  • 1/2 cup cold buttermilk
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 375°F. Lightly grease a 9×9-inch baking dish and place on a sheet pan.
  2. In a large bowl, combine strawberries, sugar, and cornstarch. Spread into the baking dish and bake for 15 minutes.
  3. While baking, mix flour, sugar, baking powder, and salt in a bowl.
  4. Melt butter and stir in cold buttermilk and vanilla. It may look curdled—this is expected.
  5. Pour butter mixture into the dry ingredients and stir gently until just combined.
  6. Remove dish from oven. Drop 1/4-cup scoops of biscuit dough over hot fruit.
  7. Return to oven and bake 28–32 minutes until biscuits are golden and filling is bubbling.
  8. Let cool for 10 minutes before serving.

Notes

  • Use frozen strawberries if fresh are unavailable—no need to defrost.
  • For a mixed berry version, add blueberries or raspberries.
  • Double the topping for a thicker biscuit layer, adding 5 minutes to baking time.
