Description

These spinach rolls wrapped in golden puff pastry are a savory delight filled with garlic-sautéed spinach and salty feta cheese. Crisp on the outside and creamy inside, they make perfect party snacks, appetizers, or light lunches.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 clove garlic, minced
  • 1 package (10 oz) frozen chopped spinach, thawed and thoroughly drained
  • Salt, to taste
  • 1 package (4 oz) crumbled feta cheese
  • 3 sheets frozen puff pastry, thawed
  • 1 large egg
  • 1 tablespoon milk
  • 2 tablespoons sesame seeds

Instructions

  1. Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. Heat vegetable oil in a skillet over medium heat. Add garlic and sauté for 1–2 minutes until fragrant.
  3. Add drained spinach and cook for 3–5 minutes, stirring occasionally. Season with salt to taste. Remove from heat and cool slightly.
  4. Stir crumbled feta into the cooled spinach mixture until combined. Set aside.
  5. Unfold one puff pastry sheet on a floured surface and cut it in half lengthwise.
  6. Roll each rectangle slightly to widen. Spoon about one-sixth of the filling down the center.
  7. Fold one side over the filling, brush the other edge with egg wash (egg + milk), and roll to seal. Press seam gently.
  8. Brush top with egg wash and sprinkle with sesame seeds. Cut into 6 pieces and place seam-side down on the baking sheet.
  9. Repeat with remaining pastry sheets and filling to make 36 rolls.
  10. Bake for 20–25 minutes, or until puffed and golden brown. Let cool slightly before serving.

Notes

  • Ensure spinach is thoroughly squeezed dry to prevent soggy pastry.
  • Can be assembled ahead and stored in the fridge or freezer before baking.
  • Swap feta for goat cheese, ricotta, or mozzarella blends.
  • Add herbs, onions, or spices to customize the flavor.
  • Store leftovers in fridge up to 3 days; reheat in oven for best texture.
