Ingredients
- ½ cup apple juice
- ½ cup water
- 2 cups baby spinach (packed and washed)
- 1 cup frozen pineapple chunks
- 3 tbsp natural yoghurt (or coconut yoghurt for dairy-free)
- Juice of ½ lime or lemon
Instructions
- Pour apple juice and water into a blender.
- Add baby spinach, frozen pineapple, yoghurt, and lime or lemon juice.
- Secure the lid and blend until smooth and creamy.
- If too thick, add a splash of water and blend again.
- Serve immediately in a glass or jar.
Notes
- Swap apple juice for a chopped sweet apple and more water to lower sugar content.
- Use kale or Swiss chard instead of spinach for a different flavor and texture.
- Add protein powder or silken tofu for extra protein.
- Use coconut water instead of plain water for added electrolytes.
- Best enjoyed fresh, but can be stored in the fridge for up to 24 hours.
