Description

These spicy sriracha noodles (Dragon Noodles) are a quick, satisfying dish made with angel hair pasta, scrambled eggs, and a sweet-spicy sauce of sriracha, soy sauce, and brown sugar. Perfect for a fast main meal or flavorful side.


Ingredients

  • 8 ounces angel hair pasta
  • 2 large eggs
  • 2 tablespoons brown sugar
  • 2 tablespoons reduced sodium soy sauce
  • 2 tablespoons sriracha sauce
  • 4 tablespoons unsalted butter
  • ¼ teaspoon crushed red pepper flakes
  • 1 green onion, thinly sliced (optional garnish)
  • 1 tablespoon fresh cilantro, finely chopped (optional garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook the angel hair pasta according to package instructions until al dente. Drain and rinse lightly with warm water. Set aside.
  2. In a small bowl, whisk the eggs until fully blended. In another bowl, stir together the brown sugar, soy sauce, and sriracha sauce until smooth.
  3. Heat a large skillet over medium heat and melt the butter. Stir in the crushed red pepper flakes.
  4. Pour the eggs into the skillet and gently stir until they are softly scrambled and fully cooked.
  5. Add the cooked pasta to the skillet and toss to combine with the eggs.
  6. Pour in the prepared sauce and stir continuously for 2–3 minutes until the noodles are evenly coated and heated through.
  7. Remove from heat and garnish with sliced green onion and chopped cilantro, if using. Serve immediately.

Notes

  • Reduce or omit crushed red pepper flakes for a milder version.
  • Any long or thin pasta like spaghetti or rice noodles can be substituted for angel hair.
  • Use honey or hot honey instead of brown sugar for a different flavor.
  • Minced garlic or grated ginger adds extra depth to the dish.
  • Top with sesame seeds for added crunch and aroma.
