Ingredients

  • For the shrimp:
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Juice of 1/2 lime
  • For the chipotle sauce:
  • 1/2 cup mayonnaise
  • 2 tablespoons plain yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1 to 2 teaspoons chipotle in adobo puree (adjust to spice level)
  • 1/4 teaspoon garlic powder
  • Pinch of salt
  • For assembling the wraps:
  • 4 large tortillas (flour or whole wheat)
  • 1 cup shredded lettuce
  • 1 cup sliced cherry tomatoes
  • 1/2 cup thinly sliced red onion
  • 1 avocado, sliced

Instructions

  1. In a bowl, mix paprika, chili powder, garlic powder, onion powder, cumin, salt, black pepper, cayenne, olive oil, and lime juice. Toss shrimp in the mixture until evenly coated.
  2. Heat a skillet over medium-high heat. Cook shrimp for 2–3 minutes per side or until pink and fully cooked. Remove from heat.
  3. In a separate bowl, whisk together mayonnaise, yogurt, lime juice, honey, chipotle puree, garlic powder, and salt until smooth.
  4. Warm tortillas in a dry pan or microwave until soft.
  5. Spread chipotle sauce over each tortilla, then layer with lettuce, tomatoes, red onion, and avocado slices.
  6. Add shrimp to each wrap, drizzle with extra sauce if desired, then roll into wraps.
  7. Slice in half and serve immediately.
