Ingredients
- 1 lb ground beef
- 1 packet ranch seasoning mix
- 1 (9 oz) package cheese tortellini
- 2 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
- Transfer the cooked beef to the slow cooker. Add the ranch seasoning mix, beef broth, and heavy cream. Stir well to combine.
- Cover and cook on low for 4 hours.
- Add the cheese tortellini, stir gently, and continue cooking on low for an additional 30 minutes, or until the tortellini is tender.
- Stir in the shredded cheddar cheese until melted and incorporated.
- Season with salt and pepper to taste and serve warm.
Notes
- Add tortellini near the end of cooking to avoid overcooking.
- For extra veggies, stir in spinach or mushrooms toward the end.
- Use mild or medium cheddar for best melting and flavor balance.
- Reheat with a splash of broth or cream to loosen the sauce.
- Frozen tortellini may be used with slightly extended cooking time.
