Description

Skillet herbed fish is a quick and elegant pan-seared dish featuring tender white fish fillets seasoned with herbs de Provence. It’s light, aromatic, and perfect for a wholesome, weeknight-friendly meal.


Ingredients

  • 1.5 pounds white fish fillets (tilapia, halibut, cod, sea bass, snapper, or catfish)
  • 2 tablespoons herbs de Provence seasoning
  • 1 tablespoon canola oil or neutral vegetable oil
  • 1 lemon, cut into wedges
  • 2 tablespoons fresh parsley, finely chopped (optional)
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper, or to taste

Instructions

  1. Heat a large skillet over medium-high heat. Add oil and swirl to coat the pan.
  2. Pat fish fillets dry. Season both sides with salt and pepper. Sprinkle herbs de Provence on top, pressing gently to adhere.
  3. Once oil is hot and shimmering, place fish in skillet (skin-side down if applicable). Reduce heat to medium.
  4. Cook for 5–8 minutes, or until bottom is golden and releases easily. Flip and cook for another 4–5 minutes, until opaque and flaky.
  5. Remove from heat and transfer to plates. Serve with lemon wedges and garnish with parsley if desired.

Notes

  • Make sure fish is completely dry before searing for best browning.
  • Add vegetables like cherry tomatoes or green beans to the skillet for a one-pan meal.
  • Drizzle with herb-infused butter for extra richness.
