Description
Skillet herbed fish is a quick and elegant pan-seared dish featuring tender white fish fillets seasoned with herbs de Provence. It’s light, aromatic, and perfect for a wholesome, weeknight-friendly meal.
Ingredients
- 1.5 pounds white fish fillets (tilapia, halibut, cod, sea bass, snapper, or catfish)
- 2 tablespoons herbs de Provence seasoning
- 1 tablespoon canola oil or neutral vegetable oil
- 1 lemon, cut into wedges
- 2 tablespoons fresh parsley, finely chopped (optional)
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper, or to taste
Instructions
- Heat a large skillet over medium-high heat. Add oil and swirl to coat the pan.
- Pat fish fillets dry. Season both sides with salt and pepper. Sprinkle herbs de Provence on top, pressing gently to adhere.
- Once oil is hot and shimmering, place fish in skillet (skin-side down if applicable). Reduce heat to medium.
- Cook for 5–8 minutes, or until bottom is golden and releases easily. Flip and cook for another 4–5 minutes, until opaque and flaky.
- Remove from heat and transfer to plates. Serve with lemon wedges and garnish with parsley if desired.
Notes
- Make sure fish is completely dry before searing for best browning.
- Add vegetables like cherry tomatoes or green beans to the skillet for a one-pan meal.
- Drizzle with herb-infused butter for extra richness.
- Do not overcrowd the pan—cook in batches if needed.
