Description

Shrimp rolls are a light and flavorful dish made with tender shrimp tossed in a creamy herb dressing, served in buttery toasted brioche buns. Perfect for casual meals or warm days, this recipe combines freshness, comfort, and satisfying texture.


Ingredients

  • 1.5 lb raw shrimp, peeled, cleaned, and deveined
  • 1 lemon, sliced
  • 3 fresh dill sprigs
  • 2 bay leaves
  • 1 tablespoon kosher coarse salt
  • 1 teaspoon whole peppercorns
  • 2 quarts water
  • 2 celery ribs, finely diced
  • 3 tablespoons scallions, finely diced
  • 1/3 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon fresh parsley, finely minced
  • 1 tablespoon fresh dill, finely minced
  • 1/2 teaspoon paprika
  • 1/8 to 1/4 teaspoon black pepper
  • 1/2 teaspoon kosher coarse salt
  • 4 to 5 brioche hot dog buns
  • 2 tablespoons salted butter, melted

Instructions

  1. In a large pot, bring the water to a boil with lemon slices, dill sprigs, bay leaves, salt, and peppercorns.
  2. Add the shrimp and cook for 3–5 minutes until pink and opaque. Drain and cool completely.
  3. In a bowl, whisk together celery, scallions, mayonnaise, lemon juice, apple cider vinegar, parsley, dill, paprika, black pepper, and salt until smooth.
  4. Chop the cooled shrimp into bite-sized pieces and fold into the creamy dressing until well coated.
  5. Heat a skillet over medium heat. Brush melted butter onto the sides of each brioche bun and toast until golden brown.
  6. Fill each toasted bun generously with the shrimp mixture and serve immediately.

Notes

  • Use medium or large shrimp for the best texture.
  • Don’t overcook the shrimp—remove them as soon as they turn pink and opaque.
  • Keep the shrimp salad and buns separate until ready to serve to avoid sogginess.
  • For a lighter version, replace half the mayo with plain yogurt.
