Shrimp rolls are a light and flavorful dish made with tender shrimp tossed in a creamy herb dressing, served in buttery toasted brioche buns. Perfect for casual meals or warm days, this recipe combines freshness, comfort, and satisfying texture.
Ingredients
- 1.5 lb raw shrimp, peeled, cleaned, and deveined
- 1 lemon, sliced
- 3 fresh dill sprigs
- 2 bay leaves
- 1 tablespoon kosher coarse salt
- 1 teaspoon whole peppercorns
- 2 quarts water
- 2 celery ribs, finely diced
- 3 tablespoons scallions, finely diced
- 1/3 cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1 tablespoon apple cider vinegar
- 1 tablespoon fresh parsley, finely minced
- 1 tablespoon fresh dill, finely minced
- 1/2 teaspoon paprika
- 1/8 to 1/4 teaspoon black pepper
- 1/2 teaspoon kosher coarse salt
- 4 to 5 brioche hot dog buns
- 2 tablespoons salted butter, melted
Instructions
- In a large pot, bring the water to a boil with lemon slices, dill sprigs, bay leaves, salt, and peppercorns.
- Add the shrimp and cook for 3–5 minutes until pink and opaque. Drain and cool completely.
- In a bowl, whisk together celery, scallions, mayonnaise, lemon juice, apple cider vinegar, parsley, dill, paprika, black pepper, and salt until smooth.
- Chop the cooled shrimp into bite-sized pieces and fold into the creamy dressing until well coated.
- Heat a skillet over medium heat. Brush melted butter onto the sides of each brioche bun and toast until golden brown.
- Fill each toasted bun generously with the shrimp mixture and serve immediately.
Notes
- Use medium or large shrimp for the best texture.
- Don’t overcook the shrimp—remove them as soon as they turn pink and opaque.
- Keep the shrimp salad and buns separate until ready to serve to avoid sogginess.
- For a lighter version, replace half the mayo with plain yogurt.
