Description

Shrimp Pineapple Skewers with a Spicy Honey Glaze combine juicy shrimp, caramelized pineapple, and a sweet-heat glaze for a quick, vibrant dish perfect for grilling season. Easy to make and full of flavor, they’re great for weeknight dinners or entertaining.

Ingredients

  • For the spicy honey glaze:
  • 2 tablespoons hot honey
  • 2 tablespoons natural honey
  • 1 tablespoon soy sauce
  • 1/4 cup pineapple juice
  • For the skewers:
  • 1 pound large shrimp, peeled and deveined
  • 1 cup fresh pineapple, cut into 1-inch pieces
  • 1 medium red bell pepper, cut into 1-inch pieces
  • 1 tablespoon olive oil

Instructions

  1. In a bowl, whisk together hot honey, regular honey, soy sauce, and pineapple juice. Reserve half of the glaze in a separate bowl for finishing.
  2. Preheat grill to 400°F. Clean and oil the grates.
  3. Thread shrimp, pineapple, and bell pepper onto skewers, alternating ingredients for even cooking.
  4. Brush skewers with olive oil on all sides.
  5. Grill skewers for 3–4 minutes per side, turning once, until shrimp are pink, opaque, and lightly curled.
  6. Brush skewers with half of the glaze after turning to allow light caramelization.
  7. Remove from grill and drizzle with reserved glaze before serving.

Notes

  • Add chili flakes or chili paste for extra heat.
  • Swap bell pepper for zucchini or another vegetable of choice.
  • Use lime juice for a citrusy glaze variation.
  • Cook indoors using a grill pan or broiler if needed.
  • Double the glaze for more sauce to serve on the side.
