Ingredients
- 4 (5–6 oz.) boneless, skinless chicken breasts
- 1 medium red bell pepper, cut into 1-inch chunks
- 1 medium head of broccoli, cut into florets
- ½ medium red onion, cut into 1-inch chunks
- 1 large lemon, cut into 4–6 slices
- 1 ½ tablespoons extra-virgin olive oil
- Seasoning Mixture:
- 1 teaspoon kosher salt
- 1 teaspoon dried oregano
- ½ teaspoon ground cumin
- ½ teaspoon garlic powder
- ½ teaspoon crushed red pepper flakes
- ¼ teaspoon black pepper
- For Serving:
- ¼ cup black olives, pitted and halved
- ¼ cup crumbled feta cheese
- ¼ cup fresh basil or parsley, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- Arrange chicken breasts and chopped vegetables evenly on a large sheet pan.
- Drizzle olive oil over the chicken and vegetables.
- In a small bowl, mix together salt, oregano, cumin, garlic powder, crushed red pepper flakes, and black pepper.
- Sprinkle the seasoning mixture evenly over everything on the pan.
- Place lemon slices on top of the chicken and scatter any extras over the vegetables.
- Roast for 25–30 minutes, until the chicken is cooked through (165°F/74°C internal temp) and vegetables are tender.
- Remove from oven and squeeze the roasted lemon slices over the chicken and vegetables.
- Top with black olives, feta cheese, and chopped herbs before serving.
