Description

Seared scallops with creamy Cajun sauce is a quick, elegant seafood dish featuring golden-brown scallops in a bold, low-carb cream sauce. It’s rich in protein, diabetic-friendly, and ready in under 20 minutes.

Ingredients

  • 8 large sea scallops
  • 1 tablespoon olive oil
  • 1/2 cup heavy cream
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic, minced
  • 1 tablespoon fresh parsley, finely chopped
  • Salt, to taste
  • Black pepper, to taste
  • 1 lime wedge, for garnish

Instructions

  1. Pat scallops dry with paper towels and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat until shimmering.
  3. Sear scallops for 2–3 minutes per side until a golden crust forms. Remove and set aside.
  4. Lower heat to medium. Add garlic to the same skillet and cook for 30 seconds.
  5. Stir in Cajun seasoning and heavy cream. Simmer for 3–4 minutes until slightly thickened.
  6. Return scallops to the pan, spoon sauce over them, and warm for 1–2 minutes.
  7. Sprinkle with chopped parsley and serve with a lime wedge.

Notes

  • Use coconut cream for a dairy-free version.
  • Don’t overcrowd the pan—scallops need space to sear properly.
  • Scallops cook quickly, so watch them closely to avoid overcooking.
  • Optional: add lemon zest or smoked paprika for variation.
