Description

These savory Italian Parmesan cookies are crisp, buttery, and packed with rich cheese and herb flavor. Quick to prepare and perfect for snacking, entertaining, or serving with soups and salads.


Ingredients

  • 1 cup all-purpose flour (120 g)
  • 1/2 cup unsalted butter, softened (113 g)
  • 1 cup freshly grated Parmesan cheese (100 g)
  • 1 tablespoon mixed dried herbs (rosemary, oregano, thyme, chives)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix flour, butter, Parmesan, herbs, salt, and pepper until a soft dough forms.
  3. Roll dough into 1-tablespoon balls and place on the prepared baking sheet with space between.
  4. Flatten each ball gently with the back of a spoon.
  5. Brush tops with beaten egg.
  6. Bake for 10–12 minutes, until golden at the edges and lightly crisp.
  7. Cool on baking sheet for a few minutes, then transfer to a wire rack to cool completely.
