Description

Salted Caramel Mocha Fudge is a rich, layered treat combining semi-sweet chocolate, espresso, creamy Dulce de Leche caramel, and a touch of sea salt. Made entirely in the microwave, it’s quick, easy, and perfect for gifting or indulging.


Ingredients

  • 3 cups (18 ounces) semi-sweet chocolate chips
  • 1 can (14 ounces) sweetened condensed milk
  • 4 tablespoons unsalted butter, cut into 8 pieces
  • 2 teaspoons instant espresso powder
  • 1 teaspoon vanilla extract
  • 12 ounces white chocolate chips or white baking chocolate, chopped
  • 1 can (14 ounces) Dulce de Leche
  • 1/2 teaspoon coarse sea salt, for sprinkling

Instructions

  1. Lightly spray a 13×9-inch baking dish with cooking spray and line with parchment paper.
  2. Mocha Layer: In a microwave-safe bowl, combine semi-sweet chocolate chips, sweetened condensed milk, and butter. Microwave at 50% power for 1 minute, stir, then continue in 15-second intervals until smooth.
  3. Stir in espresso powder and vanilla extract. Microwave once more for 15 seconds at 50% power and stir until smooth.
  4. Quickly spread the mocha mixture evenly in the prepared pan.
  5. Salted Caramel Layer: In a separate microwave-safe bowl, combine white chocolate and Dulce de Leche. Microwave at 50% power for 1 minute, stir, then continue in 15-second intervals until fully melted and smooth.
  6. Drop spoonfuls of the caramel mixture over the mocha layer and gently spread into an even layer without pressing too hard.
  7. Let the fudge set at room temperature for 4 hours.
  8. Sprinkle the top with coarse sea salt once set.
  9. Lift the fudge from the pan using the parchment, and cut into 1-inch squares, wiping the knife between cuts.
