Description

Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 large egg
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1 cup beef broth
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan, onion, garlic, egg, Worcestershire sauce, salt, black pepper, thyme, and parsley. Mix gently.
  2. Shape mixture into 1-inch meatballs and set aside.
  3. Heat oil in a skillet over medium heat. Cook meatballs 8–10 minutes, turning occasionally until browned. Remove and set aside.
  4. Pour beef broth into the skillet and bring to a gentle simmer, scraping up browned bits.
  5. Mix cornstarch with water and stir into broth. Cook 2–3 minutes until thickened.
  6. Return meatballs to the skillet and coat with gravy. Simmer 5 minutes.
  7. Meanwhile, boil potatoes in a pot of water 15–20 minutes until fork-tender. Drain.
  8. Add milk, butter, salt, and black pepper to potatoes and mash until smooth.
  9. Serve meatballs over mashed potatoes, spooning extra gravy on top.

  • Substitute ground turkey or chicken for a lighter version of meatballs.
  • Add fresh chives or parsley to mashed potatoes for freshness.
