Ingredients

  • 16 oz butternut squash ravioli
  • 1/2 cup unsalted butter
  • 2 tablespoons fresh sage, minced
  • 1/2 cup heavy whipping cream
  • 1/2 cup chicken or vegetable broth
  • 1/2 teaspoon lemon juice
  • 1/4 cup freshly grated Parmesan
  • Coarse salt, to taste
  • Fresh ground black pepper, to taste
  • 34 fresh sage leaves, for garnish (optional)

Instructions

  1. Cook butternut squash ravioli according to package instructions. Drain and set aside.
  2. In a light-colored skillet, melt butter over medium heat, stirring frequently. After about 5 minutes, add minced sage and continue stirring until golden brown flecks appear and butter smells nutty. Remove from heat and let cool for 2 minutes.
  3. Slowly whisk in the broth, followed by the cream, being careful of splatter.
  4. Stir in lemon juice and Parmesan cheese until smooth. Season with salt and pepper to taste.
  5. Add the cooked ravioli to the pan and toss to coat in the sauce.
  6. Serve warm, garnished with extra Parmesan and sage leaves if desired.
