Description

This roasted red-pepper hummus is creamy, vibrant, and full of smoky-sweet flavor, paired with homemade crispy pita chips for the ultimate dip-and-crunch appetizer. Simple to prepare and perfect for entertaining or snacking.


Ingredients

  • 2 (15-oz) cans chickpeas, drained
  • ¾ cup jarred roasted red peppers, drained and chopped
  • 3 garlic cloves
  • 1 ½ tsp salt, plus more to taste
  • ½ tsp crushed red pepper
  • ½ cup tahini
  • ½ cup water
  • 46 Tbsp fresh lemon juice
  • 46 Tbsp olive oil
  • ⅛ tsp cayenne pepper
  • ⅛ tsp ground cumin
  • 1 tsp fresh parsley, chopped
  • ¼ tsp sweet paprika
  • 4 pita breads
  • Olive oil, for brushing
  • (Optional) Garlic, herbs, or spices for pita seasoning

Instructions

  1. Add chickpeas and roasted red peppers to a food processor.
  2. Mash garlic cloves with ¼ tsp salt into a paste, then add to the processor.
  3. Add crushed red pepper, tahini, water, 4 Tbsp lemon juice, and 4 Tbsp olive oil. Blend until smooth, scraping down sides as needed.
  4. Taste and adjust with more salt, lemon, or olive oil as needed.
  5. Transfer hummus to a serving bowl, drizzle with olive oil, and garnish with parsley and paprika.
  6. For pita chips: Preheat oven to 300–325°F (150–160°C). Brush pita with olive oil and optional seasoning. Cut into triangles and arrange on a baking sheet.
  7. Bake until golden and crisp. Let cool before serving.
  8. Serve hummus at room temperature with pita chips on the side.

  • Use freshly roasted red peppers for a richer flavor.
  • Substitute roasted garlic for raw garlic for a milder taste.
  • Add extra cayenne or smoked paprika for more spice.
  • Garnish with toasted pine nuts or sesame seeds for added texture.
