Ingredients
- Red Velvet Layer: 1 1/4 cups all-purpose flour

- Cheesecake Layer: 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- Strawberry Topping: 2 cups fresh strawberries, sliced
- 1/3 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9-inch springform pan.
- Whisk flour, cocoa powder, baking soda, and salt.
- Cream butter and sugar until fluffy. Add egg and mix well.
- Stir in buttermilk, food coloring, vinegar, and vanilla. Fold in dry ingredients.
- Spread batter into pan and bake 15–18 minutes. Cool slightly and reduce oven to 325°F (160°C).
- Beat cream cheese until smooth. Add sugar and mix.
- Add eggs one at a time on low speed. Mix in sour cream, heavy cream, and vanilla.
- Pour cheesecake batter over cake layer and smooth top.
- Bake 45–55 minutes until edges are set and center slightly jiggly.
- Cool in oven with door cracked for 1 hour, then refrigerate at least 4 hours.
- Cook strawberries, sugar, and lemon juice 5–7 minutes. Stir in cornstarch slurry and cook until thickened. Cool completely.
- Spread strawberry topping over chilled cheesecake before serving.
