A soft, chewy red velvet cookie bar packed with white chocolate chips—easy to make, visually striking, and perfect for any occasion.
Ingredients
- 125 g unsalted butter, softened
- 100 g light brown soft sugar
- 75 g white granulated sugar
- 1 medium egg
- 1 tsp vanilla extract
- 1 tsp strong red food colouring
- 265 g plain flour
- 15 g cocoa powder
- 1/2 tsp bicarbonate of soda
- 1/2 tsp sea salt
- 300 g white chocolate chips (or chopped white chocolate)
Instructions
- Preheat the oven to 180ºC (160ºC fan). Line a 9×9-inch square baking tin with parchment paper.
- In a mixing bowl, beat the butter, light brown soft sugar, and granulated sugar until creamy.
- Add the egg, vanilla extract, and red food colouring. Beat again until fully combined.
- Add the plain flour, cocoa powder, bicarbonate of soda, and sea salt. Mix until a soft cookie dough forms.
- Fold in the white chocolate chips until evenly distributed.
- Press the dough into the lined tin, smoothing it into an even layer.
- Bake for 18–22 minutes, or until the surface appears set and dry.
- Allow the bars to cool completely in the tin before slicing.
- Cut into squares and enjoy.
Notes
- Use a strong gel food colouring for a vibrant red hue.
- Do not overbake—bars continue to set as they cool.
- Store in an airtight container to maintain softness.
- Recipe can be halved and baked in a smaller tin.
- Add nuts, dried fruit, or cream cheese swirl for variations.
