Description

A soft, chewy red velvet cookie bar packed with white chocolate chips—easy to make, visually striking, and perfect for any occasion.


Ingredients

  • 125 g unsalted butter, softened
  • 100 g light brown soft sugar
  • 75 g white granulated sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 1 tsp strong red food colouring
  • 265 g plain flour
  • 15 g cocoa powder
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp sea salt
  • 300 g white chocolate chips (or chopped white chocolate)

Instructions

  1. Preheat the oven to 180ºC (160ºC fan). Line a 9×9-inch square baking tin with parchment paper.
  2. In a mixing bowl, beat the butter, light brown soft sugar, and granulated sugar until creamy.
  3. Add the egg, vanilla extract, and red food colouring. Beat again until fully combined.
  4. Add the plain flour, cocoa powder, bicarbonate of soda, and sea salt. Mix until a soft cookie dough forms.
  5. Fold in the white chocolate chips until evenly distributed.
  6. Press the dough into the lined tin, smoothing it into an even layer.
  7. Bake for 18–22 minutes, or until the surface appears set and dry.
  8. Allow the bars to cool completely in the tin before slicing.
  9. Cut into squares and enjoy.

Notes

  • Use a strong gel food colouring for a vibrant red hue.
  • Do not overbake—bars continue to set as they cool.
  • Store in an airtight container to maintain softness.
  • Recipe can be halved and baked in a smaller tin.
  • Add nuts, dried fruit, or cream cheese swirl for variations.
