Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup (225 g) unsalted butter, very cold and cubed
  • 6 to 8 tablespoons ice-cold water

Instructions

  1. In a large bowl, mix flour and salt until evenly combined.
  2. Add cold cubed butter and work it into the flour using fingertips or a pastry cutter until it resembles coarse crumbs with pea-sized pieces.
  3. Add ice-cold water one tablespoon at a time, mixing gently until the dough just comes together.
  4. Turn dough onto a floured surface and gently form into a ball, then flatten into a disc.
  5. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  6. Roll out chilled dough on a floured surface and use as desired.
