Description

These no-bake Pumpkin Pie Energy Bites are packed with cozy fall flavors like pumpkin puree, maple syrup, warm spices, and crunchy pecans. Perfect for a quick breakfast, healthy snack, or post-workout boost.


Ingredients

  • 1/2 cup pumpkin puree
  • 1/2 cup natural creamy peanut butter
  • 1/4 cup pure maple syrup
  • 1/2 cup chopped toasted pecans
  • 1 1/2 cups old-fashioned rolled oats
  • 1 tablespoon chia seeds
  • 2 tablespoons flaxseed meal
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon sea salt
  • Optional Topping: 1/4 cup white or dark chocolate chips melted with 1 teaspoon coconut oil

Instructions

  1. Add pumpkin puree, peanut butter, maple syrup, oats, pecans, chia seeds, flaxseed meal, pumpkin pie spice, and sea salt to a food processor.
  2. Pulse until the mixture is well combined and holds together when pressed.
  3. Use a tablespoon or small scoop to portion and roll the dough into 18–20 balls.
  4. Place balls on a parchment-lined baking sheet and refrigerate for 30 minutes.
  5. (Optional) Melt chocolate chips with coconut oil and drizzle over the chilled bites. Return to the fridge to set.
  6. Store in the refrigerator or freezer until ready to enjoy.

  • Use sunflower seed butter and omit nuts for a nut-free version.
