Description

Golden and crispy on the outside, soft and cheesy on the inside, these potato cheese sticks are a snack or appetizer made with mashed potatoes, Parmesan and mozzarella cheese, deep-fried to perfection for a satisfying bite.


Ingredients

  • 4 large russet potatoes (about 4 cups mashed after cooking)
  • ½ cup glutinous rice flour (≈ 70 g)
  • ¼ cup cornstarch (≈ 40 g)
  • ¾ cup shredded cheese (≈ 90 g; 50% Parmesan, 50% mozzarella)
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • Oil for deep-frying (vegetable, canola, peanut, or sunflower oil)
  • Chili pepper powder (optional, for sprinkling)
  • Ketchup (optional, for dipping)

Instructions

  1. Peel and cut the potatoes into evenly-sized chunks.
  2. Place potatoes in a pot, cover with cold water, and optionally add salt. Bring to a boil, then simmer for 15–20 minutes until fork-tender.
  3. Drain the potatoes, then mash until smooth and lump-free. Measure out about 4 cups (850 g).
  4. While the mash is warm, add glutinous rice flour, cornstarch, shredded cheese, salt, and pepper. Mix and knead into a smooth dough.
  5. Line a rectangular pan with plastic wrap. Press dough evenly into the pan, cover, and freeze for 30 minutes to firm up.
  6. Turn the dough out onto a board, peel off the plastic, and cut into 8 sticks (~1×1×6 inches). Optionally score surface for texture.
  7. Heat oil to 320°F (160°C). Fry the sticks for 5 minutes until slightly golden. Drain on a rack.
  8. Increase oil temp to 350°F (175°C). Fry sticks again for 30 seconds to 1 minute until golden brown and crispy.
  9. Drain on a rack or paper towel. Sprinkle with salt and optional chili powder, or serve with ketchup. Serve hot.

Notes

  • Use starchy potatoes like russets for best texture.
  • Double frying gives the optimal crispy exterior and creamy interior.
  • For extra crunch, roll in panko breadcrumbs before frying.
  • Serve with dips like garlic aioli, spicy mayo, or yogurt herb sauce.
