Description

These pecan snowball cookies are tender, nutty, and melt-in-your-mouth with a classic snowy powdered sugar finish—made without eggs or butter. Perfect for holidays, tea-time, or make-ahead gifting.


Ingredients

  • 3/4 cup (165 g) refined coconut oil, solid but scoopable (not melted)
  • 1/2 cup (60 g) powdered sugar
  • 2 teaspoons vanilla extract
  • 2 tablespoons (30 ml) unsweetened plant milk (almond, oat, or soy)
  • 2 cups (250 g) all-purpose flour
  • 1/4 cup (30 g) cornstarch
  • 1/2 teaspoon fine salt
  • 1 cup (120 g) pecans, toasted and finely chopped
  • 1 cup (120 g) powdered sugar, sifted (for coating)

Instructions

  1. Toast pecans in a dry skillet over medium heat for 4–6 minutes, stirring often. Let cool completely, then chop finely.
  2. In a mixing bowl, stir coconut oil and powdered sugar until smooth and creamy. Add vanilla and plant milk and mix well.
  3. Add flour, cornstarch, and salt. Mix until a soft dough forms. Fold in chopped pecans. If dough is too dry, add extra plant milk 1 teaspoon at a time.
  4. Cover and refrigerate dough for 30 minutes.
  5. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Scoop about 1 tablespoon (18–20 g) of dough per cookie, roll into balls, and place 1.5 inches apart on baking sheet.
  7. Bake for 12–14 minutes, until bottoms are golden and tops are set but pale.
  8. Cool on baking sheet for 10 minutes, then roll cookies in powdered sugar while still warm.
  9. Once fully cooled, roll again in powdered sugar for a snowy finish.
