Description

A moist, flavorful quick bread made with ripe bananas, fresh apple, and creamy peanut butter. Naturally sweetened and warmly spiced, it’s perfect for breakfast, snacking, or dessert.


Ingredients

  • 2 ripe bananas, mashed
  • 1 medium apple, finely grated
  • ½ cup unsweetened peanut butter
  • ¼ cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups whole wheat flour or all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a standard loaf pan with parchment paper.
  2. In a large bowl, mash the bananas. Add grated apple, peanut butter, honey or maple syrup, eggs, and vanilla. Whisk until well combined.
  3. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  4. Add dry ingredients to wet and stir gently until just combined. Do not overmix.
  5. Pour batter into the prepared loaf pan and smooth the top.
  6. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
