Description
A moist, flavorful quick bread made with ripe bananas, fresh apple, and creamy peanut butter. Naturally sweetened and warmly spiced, it’s perfect for breakfast, snacking, or dessert.
Ingredients
- 2 ripe bananas, mashed
- 1 medium apple, finely grated
- ½ cup unsweetened peanut butter
- ¼ cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups whole wheat flour or all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Grease and line a standard loaf pan with parchment paper.
- In a large bowl, mash the bananas. Add grated apple, peanut butter, honey or maple syrup, eggs, and vanilla. Whisk until well combined.
- In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
- Add dry ingredients to wet and stir gently until just combined. Do not overmix.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

- Use overripe bananas for extra sweetness and moisture.
- Substitute almond or cashew butter for a different flavor profile.
- Fold in nuts or chocolate chips for added texture and richness.
