Ingredients

  • 1 cup cottage cheese (full-fat or 2%)
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh peaches, peeled and diced (about 2 medium peaches)
  • 3/4 cup fresh blueberries
  • 1 tablespoon all-purpose flour (for tossing fruit)
  • Optional: 1 tablespoon granulated sugar for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. Blend cottage cheese until mostly smooth using a blender or immersion blender.
  3. Mix in sugar and melted butter until well combined.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. In a separate bowl, whisk together flour, baking powder, and salt.
