Description

Peach baked oatmeal is a warm, nourishing breakfast made with soft oats, cozy spices, and juicy peaches. It’s easy to prepare, great for meal prep, and satisfying enough to keep you full all morning.


Ingredients

  • 2½ cups old-fashioned oats
  • 1½ teaspoons baking powder
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ⅓ cup brown sugar or honey
  • 2 cups milk (any kind)
  • 2 large eggs
  • 3 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 2 to 3 ripe peaches, thinly sliced
  • 1 tablespoon brown sugar (for topping)
  • ½ teaspoon ground cinnamon (for topping)
  • Optional: ½ cup chopped pecans or walnuts
  • Optional: ¼ cup white chocolate chips or vanilla chips

Instructions

  1. Preheat the oven to 375°F (190°C) and grease an 8×8-inch baking dish.
  2. In a large bowl, mix the oats, baking powder, cinnamon, nutmeg, salt, and brown sugar.
  3. In a separate bowl, whisk together milk, eggs, melted butter or coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry and stir until well combined. Fold in any optional add-ins.
  5. Pour the mixture into the greased baking dish and spread evenly.
  6. Arrange sliced peaches on top in overlapping rows. Sprinkle with brown sugar and cinnamon.
  7. Bake uncovered for 35 to 40 minutes, until the center is set and peaches are caramelized.
  8. Let rest for 5 to 10 minutes before serving warm, or cool completely for storage.
