Description

Ingredients

  • 2 medium zucchini (about 1 pound)

  • 1/4 cup (15 g) packed fresh basil leaves, finely chopped

  • 1/8 teaspoon freshly ground black pepper

Instructions

  1. Preheat oven to 425°F (218°C) and line a baking sheet with parchment paper.
  2. Slice zucchini into 1/4-inch thick rounds. Toss slices with olive oil in a bowl until evenly coated.
  3. In a shallow dish, mix Parmesan, breadcrumbs, basil, garlic powder, salt, and pepper.
  4. Dip each zucchini slice into the Parmesan mixture, pressing gently to coat both sides.
